This is the first of my new series of easy recipes called Whole30 for People Who Don’t Cook! Some of the most common reasons for not doing a Whole30 are that you either don’t have the time or don’t know how to cook. Pinterest is full of elaborate Whole30 recipes, but Whole30 doesn’t have to be complicated and fancy! My goal in creating these recipes is to make Whole30 more accessible to you.
Here’s a Whole30 compliant recipe for an all-time favorite comfort food! If you’re not familiar with “noodles” made out of vegetables, zoodles are zucchini noodles. Not only will you not miss the gluten-filled spaghetti, you’ll be getting in tons of nutrients in its place. If you don’t have a vegetable spiralizer at home, you can often find zoodles in the refrigerated section of your grocery store.
Ingredients:
2 tablespoons olive oil
1.5 pounds spiralized zucchini
1/2 yellow onion, diced
1 pound ground beef
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
2 cups Whole30 compliant spaghetti sauce
Instructions:
Heat skillet on medium and add 1 tablespoon olive oil. Once the pan is hot, add the zoodles. Sauté for about 4-5 minutes until softened. I like to sauté them using a set of tongs. Drain and transfer to a bowl or plate.
Heat the same skillet on medium and add 1 tablespoon olive oil. Once hot, add the diced onion and sauté until translucent, about 3 minutes. Add ground beef, crumbling into little pieces with your spatula. Add garlic powder, salt, and pepper. Sauté until it’s just beginning to brown, about 5 minutes. Add sauce and cook about 2 more minutes, until heated through.
Drain zucchini once more, then top with meat sauce and enjoy hot!
Servings: 4
Cook time: about 20 minutes
