This recipe is a fan favorite—it’s as easy as can be and so flavorful! Just mix everything together and stick it in the oven to roast. This will also reheat nicely for office lunches.
Ingredients:
1.5 lb boneless skinless chicken thighs
12 ounces Brussels sprouts
12 ounces green beans
1.5 tablespoons compliant Cajun seasoning (like this one or this one)
1/4 cup olive oil
Instructions:
Preheat oven to 425°.
Toss all ingredients together in a big bowl.
Spread out in a single layer on a baking sheet and bake for 20 minutes. Presto!
Servings: 2-3
Total time: 25 minutes
